Don't use an oil with additives or driers,tung oil is the one to use.
I'm an old git & happy with it,most of the time

Tung oil is recommended because it's a naturally hard drying oil with no additives. Some oils like danish contains varnish, not ideal for worktops. Come re-oiling time with tung oil there's no sanding down or real preparation, just a quick clean then on with the oil.
Obviously you could use anything you want, but like anything else there are different factors to take into account.

I used to be in the kitchen worktop business. The only thing we would recommend for hardwood worktops is danish oil. The stuff we used to use was made by Rustins. The other option is to have the worktops lacquered.
